Linguine with Chicken and Sun-Dried Tomatoes
So I made this for two yesterday, and it was amazing. However, the recipe has had a student budget spin to it!
Dressing
- 1/4 cup olive oil
- 1 chopped garlic clove
- 1 chopped onion
- 1/4 cup of chopped drain oil-packed sun-dried tomatoes
- 1/8 cup basil (preferably fresh)
Meat
- 2 skinless boneless chicken breast
Pasta
- Enough pasta for two (I used conchiglie, not linguine)
Salad
- Rocket
- Iceberg
- etc
Instructions
- Mix dressing together in order.
- Cover both sides of chicken in salt and pepper.
- Fry chicken on a medium-high heat, 3 minutes each side.
- Boil pasta.
- Add dressing, turn down to a medium-low heat.
- After another 3 minutes of cooking cut up the chicken to be served with the pasta and salad!
- ADD PARMESAN!
- YUM.
